Author and narrator Sandor Ellix Katz, a fermentation revivalist, enthusiastically explains the metaphorical significance of food and beverage fermentation in other aspects of life. Katz's passion for and knowledge of his subject are evident in his engaging narration as he applies the silent processes of fermentation to the stirrings of ideas and movements on social, political, and cultural levels. There are several technical issues with this production: numerous mouth clicks at the ends of sentences; during the interview with Jeff Gordinier, food and wine editor of ESQUIRE, too many "um's" and "ah's"; and an abrupt ending to the unedited interview.
